Recordings:
There are many choices; my personal favorite is that of Anonymous 4:  Miracles of Sant’iago – Medieval Chant & Polyphony for St. James from the Codex Calixtinus

A fine recording on NAXOS contains the piece: Sacred Chants of the 17th Century from the Abbey of St. Martial in Limoges to Santiago de Compostela, by Discantus.  The slow pace of this recording gives the listener time to experience the dissonance!
